In 2008, Miku introduced aburi-style sushi to Vancouver — flame-seared to order with a proprietary miso mirin mayonnaise sauce that has become the restaurant's signature. Under Executive Chef Kazuhiro Hayashi, the kitchen fuses elements of French and Italian cuisine into the Japanese canon, creating dishes that honor tradition while pushing boundaries.
